Grandma's ramblings . . . . .

My husband and I were fortunate enough to have two children, a daughter and a son.  I am now most fortunate to have a granddaughter whom I love with all I am.  She is a light of my life.  Adison is two and a half years old now.  She just loves YoGabbaGabba and we’re going to see them at the Times Union Center on September 2.  She will just about go crazy when she sees all her YoGabbaGabba friends on stage.  I can’t wait to see the expressions on her little face when they appear.
Sunday School begins again on September 12th at our church.  I asked Adison if she wanted to have a sleepover at Grandma’s in a couple of weeks and then go to church and she said, “Yes”.  “I’ll go to Adison’s church?  Grandma’s church too.  Mommy’s church too.”  She has come to church with me before but this will be her first Sunday School visit  and I am looking forward to that.  I hope she will like it.
I’m looking forward to doing so many things with my little angel.  Apple picking, our trip to Liberty Ridge with the church folks, Halloween party at church, trick-or-treating in her Foofa costume, and so much more.  Children love Halloween, especially the candy, but also because of all the spooky fun.    
I think we’ll make some pipe cleaner spiders for Halloween.  You need black pipe cleaners and string.  Twist pipe cleaners together to form round bodies with eight legs each.  Attach string and hang from door frame about top of head height.   Scatter little ones throughout the house.  A fun, inexpensive time together that will bring her many days of laughter and fun scaring her Mommy and Daddy with her spiders!

Believe in Your Own Ghost . . .Nancy Drew Style

Mystery Writer Cooking . . .Do you like to read mysteries?  Well, I do.  Actually, I like all sorts of books but mysteries are right up there.  In fact, when I was a young girl I read every Nancy Drew book I could get my hands on.  Growing up, I had a friend whose grandmother had loads of Nancy Drew books and I would borrow and read them every chance I got.  I really liked them.  A few years ago, through my cookbook collecting, I discovered there was a Nancy Drew cookbook -  Imagine that!  I haven’t actually tried any of the recipes but here is a familiar one for Ghostly Popcorn.

Ingredients

2 c sugar
½ c corn syrup
½ c water
2 5-½ oz pkgs popped popcorn
25 small flat wooden sticks

Put the sugar, corn syrup, and water in a saucepan.  Cook over low heat until it reaches 245 degrees on a candy thermometer, or until a spoonful of mixture dropped into cold water forms a hard ball. 

Put the popcorn into a bowl and pour the cooked syrup over popcorn and stir with a spoon to mix it well.  Mold the popcorn into balls around the ends of wooden sticks. Work quickly to finish molding the popcorn before the syrup becomes hard!

(I’d probably forget about the wooden sticks and jut eat them with my granddaughter, Adison)

You can also use this recipe for Christmas.  Mold the popcorn into balls without the wooden sticks. When they are hard, wrap them in cellophane paper and hang them on the Christmas tree.

A Visit with the Boys and their Dad - Mini Cheesecakes

My nephew Bobby is coming up from Pennsylvania with his boys Anthony and Angelo over the Labor Day Weekend.  Via facebook, he mentioned how good those little cream cheese cakes would be that I make, so I dug out the recipe (I always make these during the holiday season as they look festive besides tasting so good!)   My great-nephews like them just as much and also my niece and her family, my brother and his wife, etc. etc.etc.  So, instead of following the recipe in its entirety, I change from vanilla wafers to mini vanilla wafers and you get a lot more.  Just switch to mini wafers and mini muffin pans and you're all set.

Ingredients

1 Box Nilla wafers
2 pkgs cream cheese, softened
2 eggs
2/3 c sugar
3 tsp vanilla
canned pie filling (choose your topping)

Mix together cream cheese, eggs, sugar and vanilla.  Let stand.  Line muffin pans with paper liners.  Place one Nilla wafer upside down in each liner.  Fill each 2/3 full with cream cheese mixture.  

Makes 1 1/2 to 2 dozen 

Bake at 350 degrees F for 15-18 minutes. 

Let cool for a few minutes and top each with a spoonful of pie filling.
Refrigerate overnight (or, all day if you make them in the morning)

NEW BLOGGER HERE

WOW . . .I have been browsing so,so many blogs and having such fun.  I really have to get to work on my own blog.so that it starts to look as good as many others I have seen.  Just today I've come across a couple of books I'd like to read and more!   Lucky for me that I have a daughter who will give me a hand.   The problem is that when I go to her house to get some help and hints. . . .my 2 1/2 year old granddaughter looks at me and says something like "wanna build a castle Grandma?" or "wanna read that book Grandma?". . . .and, of course, I do those things and more with my sweet chickadee Adison and don't get much blogging work done.  So, please forgive the blank walls you see here but do enjoy the recipes and such.  Maybe tomorrow during Adison's nap time?  What, a nap??  We'll see.  Have a great day and have lots of fun blogging around.

Where Does the Time Go? . . . Quiche Tarts

WOW, it's August 21st already.  I've been thinking about Thanksgiving and our huge planned family get together of 50 or so people, Christmas time, visiting and being visited, and of course having prepared snacks to offer.  My husband and I were visiting friends during the holiday season of 1980 (I remember when it was because our daughter was a baby, having been born in March of 1980).  Anyway, we were offered these delicious quiche tarts and my husband HAD to have the recipe.  In looking at it now, I can see that it has had a lot of use in the past.   I will have to write out a new recipe card!  I have not made them since my husband passed away 9 years ago.  But since I've come across it, I think I'll add it to the list of  "things to make and freeze and have ready with short notice".  So, here it is:

QUICHE TARTS

To 3 c finely chopped onions (I used food processor) , add 1/4 c melted butter; stir in 2 Tbs flour and cook over medium heat for five minutes.

Mix together:    2 eggs, beaten
                        1 c heavy cream
                         1/2 lb grated Swiss  cheese

Combine above mixture with onion mixture; add salt and pepper to taste.

Line mini muffin pans with crescent roll dough (need 2 containers of them - I get about 3 per slice).  Fill each with a heaping Tbs of mixture and bake at 350 degrees F for 15 minutes.  

If you don't eat them all - freeze after cooling and removing from pan.  When ready to eat some, take out of freezer and place on baking sheet and bake at 350 degrees F for 15 minutes.   Makes 41 to 44 tarts.  

Perhaps my daughter and I can make a couple of batches of these together one day soon.

Apple Crisp

Heard on a talk show a couple of weeks ago that the apples will be ready early this year . . . at least in New York State.  I can't wait to go apple picking with my granddaughter Adison.  So, I've been getting my apple recipes ready and here is a simple one for Apple Crisp!

HINT:  Everyone does not have an apple orchard nearby where they can pick their own apples, so when choosing apples in the store or market, go for fresh, firm fruit with a smooth, shiny skin and good color.  A pale, color is usually a sign of immaturity and consequent lack of flavor, which is unlikely to improve, no matter how long you wait. A slightly shriveled skin could be caused by incorrect or overlong storage.  An overripe apple, which also tends to be over-size, will be mealy and rather soft to finger pressure, and its flavor will be impaired.

In a deep, buttered 8x8 baking dish, place 4 cups of peeled, sliced apples (I cut up whatever I have - the different flavored apples make this a real tasty crisp) and 1/2 c water.

Mix with fork until crumbly:

3/4 c flour
1 c brown sugar
1 tsp cinnamon
 sprinkle of nutmeg
1/4 tsp salt
1/2 c softened butter

Spread mixture over apples and bake at 350 degrees F until apples are tender and crust is brown, about 30 minutes.

Sweet Potato Souffle

Planning our first HUGE Family Thanksgiving dinner.  This year on Thanksgiving we hope to have 50 to 60 family members in attendance.  We're actually going to cook and dine in my church's fellowship hall.  So, while thinking ahead I'm wondering how much Sweet Potato Souffle I should make.  This dish has always been a hit with my children and now my granddaughter likes it too!  Give it a try . . . .

Ingredients:

10 large sweet potatoes
2 sticks of butter
3-4 large eggs, beaten
1/4 c sugar
2 greased or sprayed casserole dishes

Preheat oven to 350 degrees F 

Boil sweet potatoes and remove skin while running under cold water.  Mash potatoes.  Mix in 1 stick of butter at a time and blend.   Beat in eggs and add sugar and continue beating until smooth and fluffy.

Pour into prepared casserole dishes.

  (I usually put a design or initial on the top with a spatula - this year it will be an A for Adison). 

Bake for 45 minutes.

Super Delicious Cornbread

    About 12 or 13 years ago I began collecting cookbooks; many won on ebay bids; many others bought in antique shops and some bought while on vacations or just because they appealed to be for whatever reason (I Love Lucy cookbook, Gone with the Wind cookbook, etc.)  Following is a recipe for the most delicious cornbread I've ever had.  When my children were a bit younger they ate it warm from the oven.  I hope you'll try it and enjoy it as much as we do.

Ingredients:

1/2 c butter, softened
1 can (8 oz) corn, drained
1 can (8 oz) creamed corn
2 eggs, lightly beaten
1 pkg (8.5 oz) corn muffin mix

Preheat oven to 350 degrees F

In a large bowl, combine all ingredients until blended, but don't beat.

Pour into greased and floured loaf pan.

Bake for 1 hour, or until the top is lightly browned.
